This recipe is a great substitute for the crunch of coleslaw with out the mayo. Here’s what you need to make a serving for two…

 

Carrot Slaw

– 3 medium sized carrots
– 1 fennel bulb
– 1 small lemon
– 1 tbsp olive oil
– 1 tsp linseeds
– coriander to garnish

 

1) Start by by peeling the carrots and then use your speed peeler to shave the carrots into ribbons like above.  Using a knife slice the fennel as thinly as possible.

2) Mix the carrots and fennel in a bowl. Drizzle over the olive oil and squeeze over the juice of the lemon. Toss.

3) Sprinkle on the linseeds and a few coriander leaves…yum.

 

Great as a side dish with a braai but just as yummy on its own. Enjoy…
